Hi, my name is David Heath and welcome to my channel.
My main channel focus is around educational content, often teaching recipe design and various types of techniques.
My main aim with each video is that that there will be at least one thing new learnt.
I am a fully qualified master brewer & I have been brewing beer for over 35 years. Since leaving commercial brewing I have worked as a brewery consultant and in the homebrew industry with retail and wholesale. My current role is for a large homebrew group in Norway, where I service homebrew stores and breweries with products from many manufacturers.
I am also involved in product testing for a handful of companies due to my experience.
This RUclips channel, however, is all just me as a private individual, nothing commercial and I am careful to have the vast majority of my content about passing on knowledge.

Hi David, I so want to make this but my BREWFATHER app is saying that I am under pitching if I only add 1 packet for a 21L batch (says I need at least 4). Will one packet of Voss really work at 35 degrees?
Hey Jason, Brewfather has a very high pitch rate by default. You can change that. One pack is enough 🍻🍻🍻
If I want to make it clearer, is there a good way to do that in the brewing process?
You are better off using gelatine after fermentation.

Thanks Charlie. Firstly I want all of the hops to sink straight away for faster amalgamation into the beer. Also I like to be able to remove the vegetable debris on mass.

David, I know I'm a bit late to the game, but if I were to attempt to lager the beer in a traditional method of using an oak cask or barrel, could we not use a Foeder with pressure and temperature gages attached?

olbrygging.no though I am bias as I work for them! By far the largest and best product selection though.

Ive not had to do that as it was spot on for me out of the box. You can find PDF instructions on Keglands website that I would imagine cover this.

Hi David! Have you used the pressure kit with the? In my use the miniuni bottom tc port is most likely useless but I like the pressure kits all-in-one desing so I'd like to know if there are any things to consider before trying to use them together. TIA

I did the test with 20L of water P: 0.425 I: 0.0023 Allowed sensor diff: 8 C I created a 2 step mash test profile 50C > 65C > 77C Ramp up times 20C to 50C: 18min 50C to 65C: 11min 65C to 77C: 11min 77C to Boil: ~20min 35L Gen4 Voltage: 240V I didn't have any temperature overshoot. I guess I could increase the sensor diff to 10C without problems. For boiling, I turned off the PID. About 2-3C to reach target temperature is when you see slow increases in temperature. Need to be patient here and let the controller do its thing 😅. Overall, my test was successful. Now, I have to compare with a real brew. 🤞 Thanks for the video. It's been a great starting point to fine tune the BZ PID. Cheers

Different kinds of wheat beers seem to age quite in a different way. While what you said in the video is in my experience true for German Hefeweizen (they usually develop and off-note after more than half a year. even if refrigerated), an all-wheat Grodziskie I brewed more than a year ago (with only 3,5% ABV) still tastes great. Btw I generally bottle-condition all my beers,, even NEIPAs. Oxygen has not been a problem yet, maybe also because I am flushing the bottles with CO2 prior to filling and also put a pinch of ascorbic acid in each bottle before I close it.

Any sort of contamination pre flameout is kinda the whole reason we have beer. But yes, people can be gross.

Hi David, I'm trying to tweak this recipe in Brewfather to match my system...........I entered Dublin as my target water profile (which in BF is very close to what you show above). However, when I use the "auto" calculate button the "total" ions are out of whack.........Ca should be 120 but the auto calculator gives me additions that only get Ca to 26. The same with HCO3 - should be 319 but with suggested additions it will only be 16......other ions are much closer to target water profile.............what don't I understand about using this calculator?? Also, if I add the desired ph to the target water profile, it doesn't adjust to that ph (e.g. target ph entered is 5.6 but calculated is 5.3)
Have you set up for a variety of additions that can adjust your water? If so then take a further look at the relevant water section in the Brewfather documentation.

July 29, 2024. West Virginia USA. Have this one in the fermenter now. My son wanted to use blackberries, only change we made.. Lallemand Belgian Wit is a firecracker of a yeast! Only a 3 hour lag. Smells awesome too.

I am not sure but I suspect that this beer is a recipe for success for a desperados or el bravo clone. The malty yummy yet clean beer base, tartness and slight biternes from calamansi should go amazing with a agave/anejo tequila syrup in the keg. Will definetly try this in the future!

Hi David, I seem to be having with getting to the right gravity on dark beers - specifically your chocolate coffee porter and Verdant Cream stout. Both tasted great but I gravity was wrong. For example - my last verdant cream stout: recipe OG 1.063 FG 1.019 ABV 5.8%- actual results: OG 1.061 FG 1.027 ABV 4.5%. Do I need to be bashing at a lower temp? Yes, they were still good beers - but I'm just trying to learn how the mechanics of this works

David - I am a novice home brewer. Can you advise how much water is used for the 60 min mash. Then how much water do you use for the sparge. If the whirlpool is buy hand should I double the whirlpool time? Are the fermentation temperatures critical as I dont have a fridge. Thanks.
Hi James, these are calculations that will differ depending on what you are using to brew with equipment wise. The easy way is to use brewing software, one good example would be Brewfather. This software has an equipment section that covers all systems and if you are using a pot you can enter its dimensions and it will give you the volumes to use for recipes. Yes, a wp by hand will take longer for sure. Fermentation temps are important yes. The easy way is to ferment somewhere colder and use a heat belt and temperature controller. Thank. I would suggest using another saison yeast you can obtain, this is flexible.

Again, great video! Would this work with beer from a Grainfather conical fermenter with pressure transfer kit connected to the Cannular or even with only gravity (fermenter placed higher)?
As long as you can connect the flow then yes. I would have the conical up high and use gravity.
Thanks David - another very useful video. I bought one of these recently and found that I need to adjust the locking ring to fit my crown cap iTap. What's frustrated me is the fact that Boel don't supply the required Allen key along with what's a quite expensive iTap accessory - and as far as I can see, they don't even say in the brief instructions what size of Allen key is required. I have a good set of tools, but not a 1.5mm key, so ive just had to order one.

Im giving this one a go and its fermenting. Im confused about how long to ferment.. is it 14 days? some say the yeast finishes in 5 days. I initially thought 9 days and dry hop last 3-4 days
It can vary but a week is likely
